Food As Medicine: Himalayan Chai

Traditionally chai is made by the decoction of spices and black tea and  recipes vary from one family to the next. This is a version we made in Botany class last week and its absolutely delicious and caffeine-free, although for those of you who need that "hit" just add some black tea leaves.

The spices used in this decoction include

Cinnamon

Cinnamon has long been used for oral and dental conditions such as bad breath, toothache and to balance bacteria of the oral cavity. Cinnamon has antimicrobial and anti-inflammatory effects and more recent studies suggest it has significant neuroprotective effects for the prevention of diseases such as Alzheimers and Parkinsons.  It also contains cinnemaldehyde, a resin thought to enhance insulin release and has shown anti-allergic activity. It is a culinary herb that has been used throughout history in the Middle East, Europe, India and China.

Cardamom

A wonderful aromatic herb used to improve digestive health in particular conditions such as IBS. It helps control cholesterol and supports the cardiovascular system. In Ayurveda, cardamom is also used for its anti-inflammatory and antioxidant properties.

Clove

Clove is another important herb for its use in oral hygiene. It helps conditions such as bad breath and can temporarily relieve toothache. Clove has anti inflammatory properties and can help with upper respiratory tract infections as well as stimulate enzymes which improve digestion.

Ginger

There are many studies to suggest that up to 2g of ginger a day can improve morning sickness in pregnancy and is a very safe and effective way to treat nausea. Ginger is also a great antioxidant and may reduce pain due to its anti-inflammatory effects.

Black peppercorns (Optional)

Black pepper should be added to everything in my opinion. It enhances the bioavailability of important nutrients and phytochemicals in other herbs and enhances their absorption for maximum benefit. It may help weightloss by aiding the breakdown of fat cells and can be useful in conditions such as sinusitis and nasal congestion.

 

Ingredients:

2 cinnamon sticks

6 cardamom pods

10-15 g of fresh ginger

6 whole cloves

A pinch of black pepper (optional)

900 ml water

Honey to taste

Milk (choose from dairy, almond, coconut or soy)

Method:

Using a mortar and pestle to crush the ingredients until fragrant and oils are released. Scrape into a pot of cold water and allow to sit for a few minute before bringing to a gentle boil. Reduce heat to simmer and cover for up to 30 minutes. Allow to cool slightly before straining into a pot. Add honey & milk if desired.
